Okonomiyaki (Cabbage Pancake)

Introduced to us by our neighbors at the vernon farmers market, our kids call them okkie dokkie pancakes and love them!

Okonomiyaki (cabbage pancake)
4c cabbage shredded
2 eggs
1/2c flour
2 green onions or shallots

¼ cup water
Any other herb or flavour you have on hand. I used basil.



Okonomiyaki sauce
Tamari
Ketchup
Worcester sauce
To taste


Shred cabbage and mix with green onion and flour. Beat eggs, mix with water add to cabbage mixture. Mix until incorporated. Scoop batter to desired size and Fry on medium heat. Serve with sauce. ​

Vegetable Slaw

Vegetable slaw
½ small head red cabbage
½ small head green cabbage
2 kohlrabi shredded
2 carrots shredded
small onion, shallot or green onions
cilantro or basil (optional).

Chop and combine all veggies. toss in dressing of choice. let stand 20 mins. toss again before serving

Power Greens Saute

Power greens saute
Pac choy, kale, or cabbage
oil
garlic syrup or balsamic vinegar
salt and pepper to taste

We eat this for lunch often. the type or green depending on what is in season. easy to prepare in under 5 mins. the acidity of the vinegar add a sweetness when cooked.

Cut off end of pac choy and use whole leaf and steam. Flash fry in hot pan. Add vinegar or syrup. Add 2 cups cooked short grain brown rice
